One Dish Easy Weeknight Chicken + Veggies


With kiddos and a husband who's in school + working full time, any recipes with the words “easy” and “one dish” are instantly on my menu.


This recipe is quick and easy. It's also yummy and kid approved.


What you'll need-


1 stick of butter 


1 packet of Italian seasoning


2-4 chicken breasts, thinly sliced


4 carrots peeled and chopped (celery can also be added)


1/2 red onion


A handful of fresh green beans (ends snapped off)


3 tablespoons of garlic powder


3 tablespoons onion powder


What you'll do-


Marinate the chicken breasts in the onion and garlic powder overnight.


Preheat oven to 425.


Bake chicken in casserole dish for 10-12 minutes.


Melt stick of butter + stir in Italian seasoning. Whisk.


Remove chicken from oven. Flip chicken breasts.


Add vegetables to dish with the chicken. Pour butter and seasoning mixture over top.


Bake until vegetables are at your taste preference. Usually an extra 15 minutes for us.
